🥥🥒🥘😋Delicious Zucchini Meatballs with Coconut Curry Sauce😋🥥🥒🥘
Self-isolation sure has me thinking of food a lot. We both love good healthy food so as I had the afternoon free and pulled out a 250g of beef mince to defrost, it was off searching for something other than spag bol (don’t worry I love that too) to make. So after finding a recipe which I could work with off I went to spend time in the kitchen. Graeme was banned 🙅♀️from the kitchen as I needed some social distancing 😉
I never stick to a recipe and always change it to suit our taste buds but it generally gives me a start. I had a bit of fine chopping to do and remembered that I had my $10 Kmart 🙌 chopper which I bought for the caravan in the cupboard. It made it’s debut and worked a treat.👏
I also decided to make a roasted veggie quinoa accompaniment to go with the delish meatballs.
So the ingredients I used for the meatballs.
250g lean beef mince
cup of grated zucchini
1 egg
Panko breadcrumbs
Chia seeds
Brown onion and I also added a spring onion
Chopped garlic, ginger and turmeric
Curry powder
Ground coriander, fenugreek and cumin seeds
Ground black pepper and salt as you wish.
Light Coconut Milk
A teaspoon of healthy crunch peanut butter
A heaped teaspoon of Tahini
Garlic clove and ginger chopped very finely and
a teaspoon of curry powder oh and also some chili flakes. Then mix it altogether and it’s ready to serve.
