Ingredients:
- 250g lean mince;
- Tbs Coconut Oil or Olive Oil;
- Chopped brown onion;
- Three or more cloves of garlic chopped;
- One small red chilli chopped;
- Any leftover vegies chopped (capsicum, carrott, zucchini, tomoatoes, celery…)
- Can of diced tomatoes;
- Turmeric;
- Mixed Herbs (This is really up to you as everyone has a preferred taste) ;
- Ground black pepper and a little salt.
- Oh and a glass of Red Wine for the chef 🙂
We like to cook the mince first as this reduces any excess fats, even when we buy a lean mince. Once that has been done set it aside and cook the onion, garlic and chilli in the coconut oil. Once slightly cooked add the mince and stir through. Then gradually start adding all the herbs and spices. Stir through and ad the can of tomatoes. Let it simmer for awhile but keep stirring. You can also ad some water if you find it’s a bit dry. But Graeme likes to ad some red wine of course :). Sometimes we also ad some curry powder which on this occasion gave it that lovely yellow colour.
You can serve this up with some white rice, quinoa or spaghetti spirals. Whatever takes your fancy. Have fun with it and enjoy.
