One thing I have thoroughly enjoyed is making different breads. I never was a huge bread eater and sometimes they just don’t agree with me. So I like using alternatives.
1.5 cups almond meal
1 Tbs baking powder
3 Tbs Vegemite
4 Tbs butter
1/3 cup sour cream
2 eggs
¾ cup shredded mozzarella cheese
I also added a scoop of Psyllium Husk and leftover cream cheese on the top.
Microwave the vegemite and butter. Put all the dry ingredients together and add the grated cheese, sour cream and beaten eggs. Then add the Vegemite and butter mixture. I use a large bowl and just fold it all through. It will look wet, but it’s oh so delicious. Put some baking paper into a loaf pan and add the mixture. I then cooked it in my Convection Oven on 200c for about 20 minutes.
200 gms diced bacon pieces
1.5 cups almond meal
4 Tbs butter
1Tbs baking powder
1/3 cup sour cream
2 eggs
1 cup grated cheese (I use Mozzarella)
2 Tbs chia and flax seeds
Spices – I use some ginger powder and a little cinnamon.
I microwave the bacon pieces until slightly cooked and then drain them on some paper towel. Melt the butter and cool. Put all the dry ingredients into a bowl and mix together then ad the all the wet ingredients. Make sure you put some baking paper into your loaf tin and then pour the mixture in. Sprinkle cheese on top and then I bake it in my convection oven at around 200c for about 30 minutes.
